Equipment

  • Large oven safe skillet
  • Lid
  • Wooden spoon

Ingredients

Main Ingredients

  • 1 lb ground beef
  • ½ tsp black pepper
  • 1 tsp onion powder
  • 2 tsp Italian seasoning
  • ¼ cup mini pepperoni
  • 4 cloves garlic minced
  • 1 jar (24 oz) marinara sauce
  • 4 oz cream cheese cubed
  • ½ cup water
  • 1 package (19 oz) frozen cheese tortellini
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese

Instructions

Cooking

  • Brown the beef. Cook in a large oven safe skillet over medium high heat until browned. Season with pepper, onion powder, and Italian seasoning. Crisp the pepperoni. Stir in the pepperoni for 2 minutes, then drain excess fat.
  • Add garlic. Cook the garlic for 1 minute.
  • Make the sauce. Add the marinara, cream cheese, and water and stir until smooth.
  • Cook the tortellini. Stir in the frozen tortellini, cover, and simmer on medium low 8 to 10 minutes, stirring now and then.
  • Top. Sprinkle with the mozzarella and cheddar.
  • Broil. Broil 2 to 3 minutes until bubbly and spotted brown, or cover on low heat until melted.

Notes

Substitutions: Use Italian sausage for beef, ricotta for cream cheese, and fresh tortellini for frozen (it cooks faster).
Tips: Cook the beef to 160 degrees F and keep the simmer gentle so the tortellini does not break. Watch the broiler closely.
Storage: Refrigerate up to 3 days. Reheat with a splash of marinara or water to 165 degrees F.
