Main Ingredients
- 16 oz mozzarella cheese or cheddar or provolone, cut into 3/4 inch cubes
- 1 cup all purpose flour
- 2 large eggs beaten with 1 tbsp water
- 1 cup panko breadcrumbs
- ½ tsp salt
- ¼ tsp black pepper
- 2 cup vegetable oil for frying, about 1 inch deep
Cooking
Chill. Cut the cheese into 3/4 inch cubes and freeze for 15 minutes.
Coat. Roll each cube in flour, dip in egg, then coat in panko. Dip in egg and panko again, then freeze for 30 minutes.
Heat. Warm 1 inch of oil in a deep skillet to 350 degrees F.
Fry. Fry in small batches for 1 to 2 minutes per side until deep golden.
Season. Drain on paper towels, sprinkle with salt and pepper, and serve hot.
Substitutions: Use cheddar or provolone in place of mozzarella.
Tips: Freeze the coated cubes so the cheese stays inside the crust.
Storage: Refrigerate up to 2 days and reheat at 375 degrees F for 6 minutes.
