- 2 cups broccoli florets
- 2 cups cauliflower florets
- 1 cup shredded cheddar cheese
- ½ cup mozzarella cheese
- ½ cup grated Parmesan
- ½ cup sour cream
- ¼ cup cream cheese softened
- 2 eggs
- 1 tsp garlic powder
- ½ tsp onion powder
- Salt and pepper to taste
- Optional: breadcrumbs or crushed pork rinds for topping
Preheat oven to 375°F (190°C).
Steam broccoli and cauliflower for about 5–7 minutes until just tender. Drain well.
In a bowl, mix sour cream, cream cheese, eggs, garlic powder, onion powder, salt, and pepper.
Stir in shredded cheddar and half the mozzarella.
Fold the steamed veggies into the mixture.
Transfer everything to a greased baking dish. Top with remaining mozzarella and Parmesan.
Add optional topping (breadcrumbs or pork rinds) if desired.
Bake for 25–30 minutes, until bubbly and golden on top.
Let rest 5 minutes before serving.
