Ingredients
  

  • 2 large boneless skinless chicken breasts (halved lengthwise into cutlets)
  • 1 cup grated Parmesan cheese freshly grated preferred
  • ½ cup Italian-style breadcrumbs
  • ½ cup all-purpose flour
  • 2 large eggs beaten
  • Salt and pepper to taste
  • ½ teaspoon garlic powder
  • ¼ cup olive oil or vegetable oil for frying
  • Optional: fresh parsley or lemon wedges for serving

Instructions
 

  • Prep the Chicken: Slice chicken breasts in half lengthwise to create thin cutlets. Season both sides with salt, pepper, and garlic powder.
  • Set Up Breading Station: Place flour in one shallow bowl, beaten eggs in another, and a mix of Parmesan and breadcrumbs in a third.
  • Bread the Chicken: Dredge each cutlet in flour, dip in egg, then coat thoroughly in the Parmesan-breadcrumb mixture.
  • Cook: Heat oil in a large skillet over medium heat. Cook chicken 3–4 minutes per side until golden brown and cooked through (internal temp 165°F / 74°C).
  • Drain & Serve: Transfer to paper towels to drain excess oil. Garnish with parsley or lemon if desired. Serve hot.
