- 1 lb carrots peeled and cut into sticks
- 1 ½ tbsp olive oil
- 1 tbsp honey
- ½ tsp ground cumin
- ¼ tsp ground coriander
- ¼ tsp ground turmeric
- ¼ tsp chili powder optional for heat
- Salt and pepper to taste
- Fresh cilantro chopped (for garnish)
Preheat oven to 400°F (200°C).
In a large bowl, whisk together olive oil, honey, cumin, coriander, turmeric, chili powder, salt, and pepper.
Add carrot sticks to the bowl and toss until evenly coated.
Spread carrots on a baking sheet in a single layer.
Roast for 20–25 minutes, turning once halfway through, until tender and caramelized.
