Ingredients
  

  • 1 lb carrots peeled and cut into sticks
  • 1 ½ tbsp olive oil
  • 1 tbsp honey
  • ½ tsp ground cumin
  • ¼ tsp ground coriander
  • ¼ tsp ground turmeric
  • ¼ tsp chili powder optional for heat
  • Salt and pepper to taste
  • Fresh cilantro chopped (for garnish)

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a large bowl, whisk together olive oil, honey, cumin, coriander, turmeric, chili powder, salt, and pepper.
  • Add carrot sticks to the bowl and toss until evenly coated.
  • Spread carrots on a baking sheet in a single layer.
  • Roast for 20–25 minutes, turning once halfway through, until tender and caramelized.
  • Garnish with fresh cilantro before serving.
