Ingredients
  

  • 12 oz pasta penne or rigatoni
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 can 15 oz crushed tomatoes
  • ½ tsp chili flakes optional
  • 1 tsp dried oregano or Italian seasoning
  • ¾ cup ricotta cheese
  • ¼ cup grated parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions
 

  • Cook pasta according to package directions. Reserve 1/2 cup pasta water and drain.
  • In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant.
  • Stir in crushed tomatoes, chili flakes, and oregano. Simmer for 10 minutes.
  • Reduce heat and stir in ricotta and parmesan. Mix until creamy.
  • Add cooked pasta to the sauce. Toss to coat, using reserved pasta water as needed to loosen the sauce.
  • Season with salt and pepper. Garnish with fresh basil before serving.
