- 12 oz pasta penne or rigatoni
- 1 tbsp olive oil
- 3 cloves garlic minced
- 1 can 15 oz crushed tomatoes
- ½ tsp chili flakes optional
- 1 tsp dried oregano or Italian seasoning
- ¾ cup ricotta cheese
- ¼ cup grated parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Cook pasta according to package directions. Reserve 1/2 cup pasta water and drain.
In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant.
Stir in crushed tomatoes, chili flakes, and oregano. Simmer for 10 minutes.
Reduce heat and stir in ricotta and parmesan. Mix until creamy.
Add cooked pasta to the sauce. Toss to coat, using reserved pasta water as needed to loosen the sauce.
Season with salt and pepper. Garnish with fresh basil before serving.
